Ingredients for 4 people:

  • 1 tomato
  • 1 lemon
  • Shallots
  • 1 green pepper
  • 1 red pepper
  • 1 yellow pepper
  • 4 Mackerel fillets
  • 1 Chilli
  • 4 cloves of garlic
  • 150g of Goat cheese
  • 4 tsp of mustard
  • Salt and pepper

Preparation:

  • Place a sheet of parchment paper on top of a sheet of foil paper
  • *Tip: ingredients tend to stick to foil paper
  • You can use parchment paper on its own for the Papillotes but the foil paper really helps holding all your ingredients for this specific recipe
  • Place 1 slice of tomato, 1 Mackerel fillet, 1 slice of lemon, slices of peppers, slices of shallots, chopped garlic and chilli, 1 tsp of mustard, 2 slices of goat cheese, drizzle of oil and seasoning on the parchment paper sheet; fold the parchment paper and foil paper and fold the edges so that it holds all your ingredients
  • Place in oven for 15 minutes at 180C
