Ingredients for 4 people:
- 2 whole eggs
- 200g of 00 grade Pasta flour
- Pinch of salt
- Fresh basil
- Feta cheese
- VOM FASS Extra Virgin Olive Oil Le Special with lemon, basil and rosemary
- VOM FASS Aceto Balsamico Di Modena
Preparation:
- Mix all the ingredients in a bowl until you obtain the consistency of a dough
- Keep adding flour if the dough is too wet
- Leave to rest while you prepare your stuffing
- *Tip: if you're using a Pasta machine, make sure your dough is dry enough or it will stick
- If you're using a rolling pin, cut small portion of pasta dough. If your pasta dough is wet add some flour as you're rolling it
- If you don't have pasta cutters, you may also use baking cutters
Stuffing:
- In a Blitzer, add feta cheese and fresh basil and blitz until soft
- Place some stuffing in the middle of your pasta rings
- Wet the edges
- Take another pasta ring to cover the first one with the stuffing; wet the edges and stick both part together
- *Tip: you can also fold your rings
- Boil them until cooked
- Serve with a drizzle of VOM FASS Aceto Balsamico di Modena and VOM FASS Extra Virgin Olive Oil Le Special with lemon, basil and rosemary
